With the Fantastic heat of the summer sun, it can be too hot to do much of anything, including slaving over a hot stove or BBQ to cook dinner for your family. There are so many great ways to make a beautiful salad. The possibilities are endless, and it just depends on your tastes really!!! Sweet Mango & Green Tomato Relish
Home Made Green Tomato Relish
(PICCALILLI)
Ingredients:
1 peck (12 1/2 lb.) green tomatoes
1 qt. large gherkins Or Sweet Pickles
2 green peppers
4 White onions1 cup salt
2 qt. Cider vinegar
1 cup White Sugar
1 tbsp. Peppercorns
1 tbsp. Celery seed
1 tbsp. Mustard seed
1 tsp. whole cloves
Directions:
A) Chop the tomatoes, gherkins, peppers and onions, mix with the salt and set aside for 12 hours.
B) Drain well, then press to get out all superfluous liquid.
C) Heat the vinegar, sugar and spices, add the chopped vegetables and bring to boiling point.
D) Pack into heated sterilized jars and seal.
E) Process in a boiling water bath for 10 minutes.
The great thing about these recipes, is that they have a great sweetness, it's makes a great addition to your burgers, hot dogs, pork chops, etc! It has a different kind of relish taste, ane even though it has a bit more sugar than most like in their diets, it also has veggies that have great nutritional value.
